WEST PALM BEACH. A medley of flavors and textures awaits you at this comfortable Asian restaurant. Menu items are grouped according to preparation techniques (steaming, grilling, wok-cooking, etc.), and the different cuisines represent the countries of the Pacific Rim. In the exhibition kitchen, chefs create entrees in full view of diners, who revel in each flourish and burst of flame. Seafood takes the forefront on the menu, so be sure to try crackling calamari salad, the award-winning signature dish. The well-stocked bar mixes fantastic drinks, and when you've finished eating, take some time to browse through the mall's variety of shops.

BOYNTON BEACH. If you can't get enough of the light, delicate flavors of Asian cuisine, you'll be in heaven browsing the extensive menu at the Dumpling. Practically any Chinese dish you could imagine is available, perfectly prepared and seasoned. Plenty of crisp vegetables can be found, along with fresh seafood and meats. Sauces are great complements, never overpowering the careful balance of ingredients the kitchen achieves. The dumplings, as the name would indicate, are a must-try, and the variety of lobster dishes will make your mouth water if you're in the mood for a splurge.

DELRAY BEACH. This upscale venue follows the established rules of hip dining: great ambience, stylish surroundings and a terrific menu. It's all a success, and patrons frequent the place regularly for scene and cuisine. Infused with Mediterranean and Asian accents, the menu features ocean-fresh seafood in many incarnations. Crab ravioli, lobster risotto, sesame-ginger salmon, yellowtail snapper, Thai seafood bowl and osso bucco crafted of monkfish are representative of the offerings. Cold shellfish platters, oysters on the half shell and caviar are also available, along with steak, chicken and pork. Salads, soups and sandwiches take care of lunchtime appetites and those who want something light.

PALM BEACH. This contemporary venue, with its appealing curves and bright artwork, makes an ideal backdrop for food that gives such delight to the senses. The menu is broken into Wind (starters), Water (drinks and sushi), Earth (meats, poultry and seafood), Fire (items from the grill or wok), and Flavor (desserts). The divisions aren't clear-cut, but you won't care once you taste the fabulous cuisine. Vietnamese roasted chicken, sweet and sour pork tenderloin and crisp-fried red snapper will have your mouth watering, as will pork spare ribs and tuna tataki. Dim sum dinners are also available, and you'll find special menus for groups. Great desserts like Asian pear dumpling and tropical fruit dim sum maintain the theme beautifully. The Dragonfly Lounge offers a great bar scene should you want to hang out and socialize.

DELRAY BEACH. Head and shoulders above the usual sushi spots, Kyoto plies diners with an extensive menu, a lively atmosphere, and great ambience. The soaring space accommodates table dining as well as perches at the sushi bar, and guests revel in the place's sense of humor. The volcano roll comes with broiled conch atop a California roll, while the Delray roll features eel, roasted garlic, and steamed spinach. If you'd rather dig into a large entree, look to miso sea bass, Mandarin duck, NY steak, or nori-wrapped salmon for inspiration. A good selection of sakes (hot and chilled) is available, and the staff will happily help you pair them with your entree. A full bar and outdoor dining only add to the experience.
